Lecithin is a very large, compact molecule of organic matter
which contains phosphoric acid and choline, and regulates the
deposition of fats in the liver, and breaks down fats in the
stomach. It is essential for tissue organisms of the nervous
and glandular system, and is a generator of physical, mental
and glandular energy. It is a raw material for liver synthesis.
The fluid part of the blood is composed of blood albumin, which
carries inorganic salts, two types of globulins, and the lipoproteins
which are composed of lecithin. Blood cells are protected from
being destroyed by enzymes in the blood and by an outside covering
which is mostly Lecithin and which causes more cells to remain

lecithin, contains 3 times the amount of choline than does ordinary
lecithin. This emulsifies fats. If Phosphatides (and proteins)
did not surround lipids, they would form greasy bubbles in the
blood and rise in much the same way cream rises to the top. The
Phosphatides, which the unsaturated fatty acids choline and lecithin
are part of, are so important to health that an organism cannot
survive without them.
